Mondateli eliminando i gambi, le punte spinose e le foglie esterne piú dure; quindi lavateli, tagliateli in due o quattro spicchi, a seconda della grandezza, e immergeteli in acqua e succo di limone - un limone per 5 litri d'acqua - cosí da non farli annerire.
Portate a ebollizione in una pentola un litro di vino bianco, aggiungendo 2 cucchiai d'aceto; scolate i carciofi dal limone e lasciateli cuocere nel vino per non piú di un quarto d'ora, perché devono rimanere al dente.
Dopo averli scolati, lasciateli asciugare fino al giorno successivo; poi disponeteli in vasi di vetro insieme alle spezie che piú preferite - prezzemolo, menta, aglio, pepe o alloro - e ricopriteli d'olio; dopo un paio di giorni, parte dell'olio sará assorbito dai carciofi; aggiungete quindi altro olio - fino ad un centimetro e mezzo dall'orlo - e tappate i vasi senza forzare troppo.
Fate bollire per i tempi indicati.- 250cc (20 minuti) -500cc (30 minuti) -1000cc (40 minuti) - 1500cc (50 minuti)
Conservate in un luogo asciutto e buio per circa un mese prima di consumarli.
E ... se ne avanzate qualcuno ... tagliateli a metá, fateli marinare per un'ora in olio extravergine di oliva e rametti di timo poi grigliateli da ambedue i lati. Salateli a vostro piacimento e accompagnateli poi con qualche fettina di mozzarella di bufala: una vera bontá!
